Icewine is one of the gifts of the Canadian winter. Genuine Icewine is naturally frozen and left on the vine under protective netting until the deep freeze of the Canadian winter. The grapes become naturally dehydrated by the elements, adding concentration of flavours, aromas, sugars and acid in the juice.

Temperatures dipping to -10 Celcius in December and January freeze the grape solid.

Icewine is usually harvested and pressed at night to prevent the grapes from thawing by chance. Serve chilled always! (5-7 Celcius).
